The third step on the journey to Pommelier, How to Assess Cider takes the participants appreciation and evaluation to an elevated level. This third tier builds upon the learnings from the Foundation and Advanced Courses to enable participants to understand how to fully assess and judge the quality and style of any given cider.
The crucial differentiation between objective and subjective assessment will be explored (and tasted!) before reviewing the importance of context and heritage.
Participants will then be presented with a number of ciders displaying off-flavours, complete with guidance on how they are achieved, how they can be prevented and how (if) they can be alleviated.
Finally, participants will be introduced to the world of cider judging, exploring the different approaches by becoming classroom judges themselves! The knowledge accrued from this course can be used to enhance the experience and enjoyment of tasting cider, to better equip those selling cider the trade as well as preparing judges in cider competitions for the processes and standards required.
