Westcombe's flagship cheese, a traditional clothbound Cheddar made in the lush hills of East Somerset from unpasteurised milk. Their Cheddars are made entirely by hand and age for around 12-18 months in the hillside cheese cellar. As they age they develop their mellow but complex flavour, with long brothy notes of hazelnut, caramel and citrus revealing on the structured breakdown.
