The 750ml Cider Pick:

It's from Maison Sassy  and called La Sulfureuse.

Maison Sassy defines itself as a disruptive spirit advocating for a return of the real taste. All their ciders are made with 100% fresh pressed apples from Normandy and produced near the historic Château de Sassy. Created by the childhood friends Xavier d’Audiffret Pasquier and Pierre-Emmanuel Racine-Jourden with the help of a 30 year expertise cellar master, it aims to give a modern touch to the traditional French cidre.

This rosé cider combines about twenty apple varieties among which the red fleshed Geneva Crab stands out. Apples are pressed with an artisanal technique, ensuring that the astringency of the seeds does not affect the final flavor. Once the juice reaches the desired fermentation level, they filter it to keep the sweetness and the low alcohol volume (3%).

The result is a clean, sophisticated, not very complex and quite sweet cider, with a an outstanding acidity than comes from the Geneva variety. Very fruity and crisp, reminiscent of apple compote, plums and a creamy touch, don't expect traditional farmyard flavours often associated with Norman ciders. They recommend to serve it at 7° as an aperitif or paired with desserts. Even for breakfast! If you like light ciders with a hint of fresh juice, this may be your option. À la vôtre!
