CIDER MAC AND CHEESE RECIPE
It’s no secret that mac and cheese is a favourite worldwide, and as part of world pasta day we’re paying tribute to a classic by putting our own spin on it – cider style! Give this cider mac and cheese a go – you won’t be disappointed!
YOU’LL NEED THE FOLLOWING FOR CIDER MAC AND CHEESE
- 35g butter
- 50g flour
- 150ml cider
- 400ml full-fat milk
- 150g strong cheddar, grated
- 2 tbsp double cream (optional)
- Bacon (optional)
- 250g macaroni
DIRECTIONS:
Preheat the oven to 200C/
Melt the butter in a saucepan and stir in the flour. Make a roux
Slowly add the milk a little at a time off the heat, stirring well after each addition with a wooden spoon – making sure the mixture is smooth.
When all the milk has been added, slowly add the cider, in the same way, stirring well.
Put the pan back on the heat and bring to the boil, stirring all the time. Turn the heat down,
Stir in the cheese and double cream, if using, keeping a bit of the cheese back to sprinkle on top.
Cook the macaroni in plenty of boiling, lightly salted water for a couple of minutes less than it says on the packet. Drain.
Fry off bacon (optional)
Combine the macaroni with the sauce, pour into a gratin dish (mix in bacon) and sprinkle the remaining cheese (and bacon) over the top.
Bake until crispy (approx 20mins)
